DIRECTIONS

  1. Prepare the zucchini: Slice the zucchini thinly (use a mandoline if possible). Pat dry with paper towel.
  2. Flour mix: In a bowl, combine the flour, Chee’ish and salt. Toss the zucchini slices until evenly coated – or shake them gently in a container with a lid.
  3. Frying: Heat the oil to about 170–175 °C in a pot or pan. Fry the zucchini in small batches for 1–2 minutes until golden and crisp. Transfer to paper towel to drain excess oil.
  4. Make the dip: Mix yoghurt or crème fraiche with parsley, garlic, salt and pepper.
  5. Serve: Arrange the crispy chips in a bowl and serve immediately with the dip on the side.

QUICK TIP

Add a touch of Bacon’ish to the dip for a smoky note, or Truffle’ish for a luxurious twist.
