SEAR THE CAULIFLOWER

Heat the rapeseed oil in a large pan. Add cauliflower, garlic, and thyme. Sear over medium-high heat until golden and lightly crisp. Turn the cauliflower as it cooks, and season with salt and pepper. Place the garlic and thyme on top, cover with a lid, and let steam-fry for 5 minutes. Remove from the heat and set aside.

TOAST ALMONDS AND BACON’ISH

Use the flavoured oil left in the pan. Add the almonds and toast gently until they begin to brown. Add Uhhmami Bacon’ish and toss briefly – it will melt into the oil and coat the almonds with rich, smoky flavour.

TO SERVE

Spread hummus on a plate. Arrange the seared cauliflower on top, and spoon over the toasted almonds and the flavourful oil.

QUICK TIP FROM FRANK

Serve as a vegetarian main dish with flatbread, or as a starter/tapas with a squeeze of lemon and fresh herbs.
