Pickled red onion

INSTRUCTIONS

Preparation – Pickled Onion (can be made in advance):

Mix sliced red onion with sugar and salt. Let sit for 1 hour. Add vinegar and marinate for at least 2 more hours. Keeps well in the fridge for several weeks.

Preparation – Hotdog:

  1. Peel the white asparagus and trim the ends
  2. Brush with olive oil and season with flaky salt and fresh thyme.
  3. Grill or roast for 4–5 minutes until tender and lightly charred.

Cabbage Slaw

Mix mayo with Uhhmami Truffle’ish and fold in the shredded cabbage. Season to taste.

Assemble

Warm the hot dog buns if desired. Spread slaw inside the bun, place grilled asparagus on top, and finish with pickled red onion.
