  1. Add the pumpkin, onion, garlic, water and Uhhmami Chicken’ish Bouillon to a large saucepan.
  2. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the pumpkin is completely tender.
  3. Blend the soup until smooth using a hand blender or countertop blender.
  4. Stir in the coconut milk and gently heat for another 2–3 minutes. Do not boil after adding the coconut milk.
  5. Taste and adjust with freshly ground black pepper or salt if needed.
  6. Serve warm and garnish with mushrooms and freshly chopped parsley.

Chef’s Tip

For even more flavour, sauté the mushrooms in a little olive oil until golden before serving. Their rich, roasted flavour pairs perfectly with the creamy pumpkin soup.
