  1. Rinse the lentils well.
  2. Put the lentils, onion, potato, bell pepper, water and Uhhmami Vegetables in a pot.
  3. Bring it to a boil and let the soup simmer for about 20 minutes, until the lentils and potatoes are tender.
  4. Taste with salt and pepper.
  5. Lightly blend the soup with an immersion blender for a creamy texture—or serve it rustic.
  6. Optionally garnish with fresh parsley or cilantro.
