INSTRUCTIONS

Heat the oil in a large pan. Sauté the gnocchi for 3–4 minutes until golden and slightly crisp.

Add mushrooms and cook for another 3 minutes. Add the spring onions and stir for 1 minute.

Add spinach and let it wilt, stirring gently.

Pour in the plant-based cream, then stir in Uhhmami Vegetables and Blue Chee’ish. Simmer gently until the sauce thickens slightly.

Season with salt and pepper to taste.

Serve warm, topped with fresh herbs or toasted nuts if you like.

QUICK TIP FROM FRANK

You can swap Blue Chee’ish for Chee’ish or Truffle’ish, depending on your mood – go cheesy and mellow with Chee’ish, or earthy and aromatic with Truffle’ish. This dish also works beautifully with kale or chard instead of spinach, and a touch of lemon zest adds a fresh lift.
