Het is een Japans woord dat zich laat vertalen als \"aangename hartige smaak\" en wordt vaak beschreven als een vlezige, hartige of bouillonachtige smaak. Umami komt vaak voor in voedingsmiddelen die veel glutamaat bevatten, zoals oude kazen, tomaten, paddenstoelen, sojasaus en zeewier. Het wordt ook geproduceerd door de afbraak van eiwitten, zoals in vlees, vis en schaaldieren. De ontdekking van umami als een aparte smaak wordt toegeschreven aan de Japanse wetenschapper Kikunae Ikeda, die glutaminezuur identificeerde als de belangrijkste verbinding die verantwoordelijk is voor de smaak.
