Ma immergendolo due volte si ottiene una maggiore croccantezza e un rivestimento pi\u00f9 spesso.<br><br>Mettete in una pentola il tofu, l'acqua, Ocean'ish e un pizzico di sale. Coprite con un coperchio e fate cuocere a fuoco lento per 5 minuti. Lasciare quindi il tofu a marinare nella pentola per tutta la notte.<br><br>Mescolare la pastella utilizzando l'acqua della pentola anzich\u00e9 quella del rubinetto. Lasciare riposare per qualche minuto per addensare. Se necessario, aggiungere un po' d'acqua. La consistenza dovrebbe essere quella di una pastella per pancake.<br><br>Scaldare una generosa quantit\u00e0 di olio in una padella (non \u00e8 necessario friggere).<br>Immergere i pezzi di tofu uno alla volta nella pastella. Friggere fino a doratura su ogni lato, circa 3 minuti per lato.<br>Immergerli nuovamente nella pastella e friggerli ancora una volta per ottenere uno strato ancora pi\u00f9 croccante, se lo si desidera.<br><br>Se un pezzo di tofu si stacca, non preoccupatevi. Tenetelo insieme nella mano, abbassatelo delicatamente nella pastella, giratelo per ricoprirlo, quindi sollevatelo come una manciata e mettetelo con cura nell'olio caldo.
