Det er et japansk ord, der kan overs\u00e6ttes til \"behagelig velsmagende smag\", og det beskrives ofte som en k\u00f8dfuld, velsmagende eller bouillonagtig smag. Umami findes ofte i f\u00f8devarer med et h\u00f8jt indhold af glutamat, f.eks. lagrede oste, tomater, svampe, sojasauce og tang. Det produceres ogs\u00e5 ved nedbrydning af proteiner, f.eks. i k\u00f8d, fisk og skaldyr. Opdagelsen af umami som en s\u00e6rlig smag tilskrives den japanske videnskabsmand Kikunae Ikeda, som identificerede glutaminsyre som den n\u00f8gleforbindelse, der er ansvarlig for smagen.
